CRUMBED CHICKEN TENDERS
1 kg chicken tenders rinsed and patted dry
1 level tsp salt
1 Heaped tsp pepper
1 Heaped tsp chilli flakes ( or to taste )
1 Heaped tsp of a good quality lemon pepper
1 Heaped Tblsp fresh ginger
150 ml Yoghurt
1 medium bunch fresh coriander
SEASONED CRUMB MIXTURE
1 heaped cup breadcrumbs
1/3 cup plain flour
1/2 tsp salt
1 tsp lemon pepper
1 tsp pepper
1 tsp chilli flakes
1 tsp VEGETA ( or any other ) Stock powder
1/2 tsp garlic powder ( optional )
Mix all of the above well.
To crumb chicken place crumb mixture in a tray - place individual chicken tender and press hard into crumbs to flatten tender as well as allow the crumbs to stick we’ll ensuring the tender is well covered
Refrigerate till required.
You can deep fry in oil or spray and bake in a hot oven being careful not to overcook and dry out chicken
Enjoy with a side of chips and coleslaw or salad or blanched veggies
1. Chop or process coriander finely then add yoghurt and all other ingredients- mix well with chicken and allow to marinate overnight or a few hours
2. Prepare seasoned crumbs
3. Coat well in crumb mixture
4. Fry or bake as you wish
