BASIC MOON DOUGH RECIPE


2cups water

2tblsp butter 

Pinch of salt- 

Bring to a boil- then add

2cups flour- 

Stir vigourously until it forms a ball 

Knead into a smooth dough - roll out and cut with large size cutter...place a spoonful of filling on one half n cover to other half to make a moon shape...and close over tightly ! Dip in laai (paste made with white flour n water to pancake consistency) coat in bread crumbs and freeze.

To serve, fry in deep oil. 


CHICKEN AND MUSHROOM MOONS

Filling

4 pieces chicken fillet cubed

1tsp salt 

1tsp aromat

1tsp chicken spice

1tsp garlic

1tsp grounded chillies 

1tsp black pepper powder 

1/2 green pepper cubed 

1tin corn 

1tray mushrooms(cleaned and steamed with salt and pepper)

1 tub fresh cream 

1tsp flour

1tsp pepper sauce

1tsp mushroom sauce

Grated cheese


Braise chicken in ghee- add spices- add green pepper and creamstyle corn-add mushrooms- make a paste with the flour/pepper sauce/mushroom sauce and water and add to the chicken- add freshr Cream- when cool add grated cheese! Must be dry and thick!


 CHEESE MOONS


Ingredients

leeks or onions, creamstyle corn, equal amounts of cheddar and mozarella cheese[all grated] 

Method

slice leeks and saute in little butter or ghee, add salt, green masala. Braise lightly. Then add the corn, simmer till dry and thick. Let it cool completely. Then add the cheeses. Filling mustn't be too wet or too dry.


VEGETABLE MOONS 

1 shredded baby cabbage

1 grated onion[remove all the water]

1 shredded green pepper[colours are optional]

1 cup corn

Grated carrots

Boiled rice noodles

Mushrooms [optional]

Stir fry the veggies in oil, add 1 tbls aromat, salt, pepper, green masala. Let it cool.

Sauce

Boil together:

1 ½ tbls butter

1 cup milk

1 ½ tbls maziena 

When cool~Add salt, pepper, green Corainder spring onion, equal amounts of cheddar and mozarella cheese.


METHI BHAJI MOONS

2 cups flour

2 tblsp ghee

2 heaped tsp baking powder

1 bunch methi finely chopped

A little fresh dhania finely chopped

Salt to taste

2 med potatoes boiled and mashed

1 cup lukewarm water and milk mixed together


METHOD

Mix together flour, ghee baking powder, methi , salt, dhania and mashed potatoes.

Make dough with milk and water mixture...

Divide dough into 5 balls and roll each ball into a roti.

Smear roties with melted ghee then stack up and roll into 1 big rotie

Cut into rounds and fill with filling of choice, chicken, mince or potatoe and seal.

You can seal edges with flour and water paste. Fry in medium to hot oil



PEPADEW AND CREAM CHEESE MOON FILLING


1/2kg cubed chicken fillet 

1onion cubed fine

1/2 tsp lemon pepper

1 tsp  garlic pepper

salt to taste

green masala to taste

crushed garlic

1 heaped tsp paprika

1tsp coriander powder

1tsp freshly ground black pepper 1tub cream cheese

Cook onion in ghee /oil till soft add crush garlic. Add chicken and rest of the ingredients. cook until almost done. add 1 tomato finely cubed and 1/4 cup chopped peppadews. cook till water burns out. When completely cold mix in 1 tub cream cheese and chopped green Corainder.
