Spicy Beetroot and Carrot Kebabs


Ingredients 

2 medium beetroots

2 large carrot

4 tbsp garlic infused oil

1 tsp chilli powder

1 tsp hot madras curry powder

1 tsp salt


Method

Combine the oil and spices in a bowl. Put to one side.

Using a mandolin slicer, slice the beetroots into thin medallions.

Using a potato peeler, create ribbons using the carrots.


Put the veg into the oil mixture and make sure it is all coated. 

Soak some wooden skewers in water for 15 minutes.


Take a skewer and gentle pierce the beetroot and carrots and skewer these onto the wooden sticks. Don't overcrowd the skewers. Complete until you have no veggies left.


Place the skewers on a baking tray, resting the skewers on the edges so that the veg doesn't touch the bottom.


Place the baking tray in a pre-heated oven (160 degrees) and roast in the oven for 25/30 minutes. 


When they are cooked, serve with some pitta and tzatziki.
