Haloumi Chicken salad


Served with homemade bread rolls. 1chicken fillet cut into thin strips,

marinate in juice of 1/2lemon, salt to taste, drizzle of olive oil & honey, 2tsp harrisa paste, just give it little fry till browned cooked through, leave aside till needed,

I used ready herb salad leaves bag from Asda, or you can use spinach coriander, rocket leaves basil, pea shoots etc... empty into serving bowl/platter, slices of tomato & red onion, slice red pepper, handful of coriander leaves, scatter over some green peas & sweetcorn, drizzle some dressing, scatter over chicken drizzle more dressing, heat up frying pan or griddle pan to hot add slices of halloumi brown on both sides, place onto salad drizzle dressing serve...

Dressing: in small blender jug add 2Tbs harrisa paste, 3Tbs mayonnaise, 1Tbs garlic sauce, 2Tbs olive oil, juice of 1/2lemon, drizzle honey give it little whizz dressing ready.
