Veggie Curry

The recipe is below. 👇 


Ingredients 

Frozen vegetables - I had broccoli, cauliflower, carrots and peas

1.5 fresh tomato

1 medium chopped onion

3 tbsp oil

1tbsp garlic paste

1tbsp ginger paste

1 green chilli

1.5 tsp salt (add more if you need it)

1 tsp turmeric

1 tsp chili powder

2 tsp garam masala

1 tbsp paprika

1/2 tsp ground cumin

1/2 tsp ground coriander

Pinch chilli flakes

Handful of fresh coriander 


Method

Add the oil to a saucepan and heat on medium high. Add the chopped onions , garlic, and ginger paste. 

Cook on a medium high heat until the onions are translucent. You can add 50 mls of water to the onion to sweat them down. 


Add the chopped tomatoes and cook on high heat until they have darkened in colour and have reduced.

Add the spices and cook until the spices have released an orange oil. Keep mixing so it doesn't burn. 


Add the frozen veg, mix well and cook on high heat for 5 minutes. Add enough water to cover the veg and let it Cook on high heat for 5 minutes. Check to see if the veg is cooked, cook for another few minutes until the water as reduced. 


Add fresh chopped coriander, stir and its ready to be served.
