Healthy Muffins 

Dry Ingredients

2 cups raw bran

21/2 cups nutty wheat flour

21/2 t bi-carb


Wet Ingredients 

2 eggs - beaten

11/2 cups brown sugar

1/2 cup oil 

1 t vanilla essence 

2 cups milk


Method

Add wet ingredients to dry ingredients in a large bowl. Mix thoroughly.

Add 1 cup coconut and 1 cup raisins or mixed fruit 

Also add 1/2 cup chopped pecans 

Refrigerate overnight

Place spoonsful in greased patty pans and bake in moderate oven for +- 20 minutes

Beat batter each time before use


Variation

Substitute nutty wheat flour with cake flour

Mashed bananas, grated carrots, crushed pineapple can also be added
