CHICKEN SALAD


Chicken marination:

Chicken boneless breast: 450 g

Garlic powder: 2 tsp

Ginger powder: 1 tsp

Onion powder: 1/2 tsp 

Black pepper crushed: 1 tsp 

Red chillies crushed: 1 tsp

Cumin powder: 1 tsp 

Paprika: 1 tsp

Salt: 1 tsp

Lemon juice: 2 tbsp 

Oil: 1 tbsp 

Dried oregano: 1/2 tsp

Dried corriander: 1/2 tsp

METHOD:

Wash and dry the chicken breast.

Prick the chicken piece with fork.

Now add the chicken in bowl and add all ingredients.

Marinate the chicken for 1 hour.

Add a little oil in a grill pan and heat up.

Place the marinated chicken on grill pan to cook on both sides on low medium heat.

Take out of the pan once fully done and slice in pieces.


SALAD DRESSING:

Mayonnaise: 3 tbsp 

Mustard: 1 tsp 

Worcestershire sauce: 1/2 tsp

Lemon juice: 1 tbsp 

Salt: to taste

Black pepper: 1/2 tsp 

Olive oil: 2 tbsp 

Parmesan cheese: 5 tbsp

Take all the ingredients of salad dressing , add all in a bowl , whisk all together and set aside for later use.

Lettuce , cherry tomatoes, red onions, olives, sweet corns, cucumber, rocket leaves, watercress , pomegranate seeds, bell pepper, and feta cheese.

METHOD:

Add all vegetables and cheese on the platter , pour sald dressing, place the chicken on top and serve.
