Spongy smooth banana Bread


SPONGY SMOOTH BANANA BREAD.. 


3 large extra ripe bananas

1/2 cup yoghurt 

1/2 cup fresh cream

2 large eggs

1/2 cup oil 

1 level tsp salt 

1 cup dark brown sugar

1 tsp bicarbonate soda 

2 tsp baking powder 


Once smooth and well mixed pour out into a large bowl and fold in approximately 1.5 - 2 cups plain flour.

Consistency should be thick but pourable 

Pour into a well greased loaf pan and bake in a pre heated oven at 180 sir 34-45 min 

Skewer inserted in centre of cake should come out dry 

Allow to cool then cut into slices 

Stale banana bread is delicious when toasted and served with butter or fresh cream
