Chicken and Spaghetti Balls


Ingredients 

2 cups chicken breast

3/4 cup unboiled spaghetti

4 medium sized potatoes 

1 cup grated cheese

1 1/2 tsp All in one complete seasoning 

1 1/2 tsp lemon pepper seasoning 

A handful of coriander leaves

1 tsp lemon juice

Grind / finely chopped green chillies

Salt to taste

2 eggs

Bread crumbs

Method.... 

Put chicken breast with a little salt and oil in a pan. No water. Allow to cook on medium flame in its own water. Do not dry out. When done allow to cool then shred it with a fork or in a food processor as I have done. 

Boil spaghetti in some salt water with a bit of oil. When done drain and wash. Set aside

Peel and cube potatoes. Boil in salt water. When done drain and mash. Allow to cool down.

When everything has cooled down mix in everything including the cheese. Roll into balls dip in eggs and coat with bread crumbs. You can freeze at this point. When frying from freezer do not thaw. Add directly to medium hot oil and fry. Enjoy.
