Bone Broth/ motton Bone soup



Bone Broth/Haddiyon Ka Shorba/Mutton Bone Soup


Ingredients:

1 tbsp neutral oil

1 tbsp ghee

4 whole cloves

1/2 tsp whole black pepper

3/4 tsp cumin seeds

2 small bay leaves, or 1 large

1-inch piece of cinnamon

1.5 lb mutton bones

2 tsp ginger garlic paste

1 medium onion, diced (purple or yellow)

1 tsp black pepper (or to taste)

1 tsp salt (or to taste)

1/2 tsp turmeric powder

1/4 tsp garam masala

6-7 cups of water

2 tbsp cilantro/coriander leaves

2 tbsp mint leaves (or 1/4 tsp dried mint)


Directions:

1. Add oil/ghee to a large pot.

2. Once slightly warm, add cloves, whole black pepper, cumin seeds, bay leaves, cinnamon, mutton bones, turmeric, ginger garlic paste, and onions. Mix well.

3. Allow this to cook on high heat for about 5-10 minutes, until the color of the meat changes.

4. Add black pepper & salt and stir. We recommend adding only 1/2 a tsp of each for now. Mix well.

6. Add 6-7 cups water, cilantro, and mint. Bring to a boil. Then, being sure to leave a slight gap, cover and allow the mixture to simmer on low heat between 4-5 hours.

7. About 5 minutes before cooking is completed, taste and adjust salt and pepper accordingly. Add 1/4 tsp garam masala and continue to simmer for the last 5 minutes.


Mutton bone broth is ready! Serve with naan, or have on its own. Enjoy!
