Achari Patta Gobi..Stir Fry Cabbage Curry 


Achari Patta Gobi, or Stir Fried Cabbage Curry, is a quick and easy vegetable curry, which is also vegan! It is a dry salan (curry) that pairs well with roti or rice. It only requires 3 simple steps: Blanch shredded cabbage, prepare the tempering, and mix them together! Protip: Use a package of coleslaw if you don't feel like shredding your own cabbage! This recipe is quick, easy, and loaded with flavor!



Ingredients: Serves 2-4 

4 cups of shredded cabbage (or 1 package of coleslaw), blanched 

For tempering: 

3 tablespoons oil 

3/4 tsp mustard seeds 

3/4 tsp cumin seeds 

3 garlic cloves 

3 dried red chilis 

8-10 curry leaves 

1/2 tsp ginger garlic paste 

Salt to taste 

1/2 tsp turmeric powder 

1/4 teaspoon achari masala

1/2 tsp red chili powder (adjust to taste) 

*Achari masala: 2 tbsp coriander seeds, 2 tbsp cumin seeds, 1 tsp mustard seeds, dry roast everything and grind into a fine powder.


Directions: 

1. Blanch shredded cabbage and set aside until ready to use. See notes below on how to blanch cabbage. 


2. In a small pan (a mini cast iron is perfect for this), get tempering ready: 

-Add 3 tablespoons oil, allow this to heat up. 

-Then, add 3/4 tsp mustard seeds and 3/4 tsp cumin seeds and let them sputter 30 seconds. 

-Add 3 garlic cloves and 3 dried red chilies, and gently stir until the garlic begins to turn slightly golden. 

-TURN OFF THE STOVE-we will leave it off for the rest of the ingredients to avoid burning them. 

-Add 7 to 8 curry leaves, let them sputter for 15-20 seconds. 

-Add 1/2 tsp ginger garlic paste, stir and simmer for 30 seconds. 

-Add salt to taste, 1/2 tsp turmeric powder, 1/4 tsp achari masala, 1/2 tsp red chili powder. Stir and set aside. 


3. Place cabbage in a separate pot. Add tempering mixture, mix well, and allow it to cook on medium high for about 10 minutes. Garnish with cilantro leaves and serve!


Tips/Notes: 

1. To blanch shredded cabbage, add to boiling water and allow the water to return to a simmer. Then, simmer for 1-2 minutes and strain and rinse with cold water. 

2. Using coleslaw is a great shortcut and it adds some shredded carrot to the curry as well! Also, try to go for organic ingredients whenever you can.
