Mexican chicken stuffed Peppers:
6 red peppers
2 cups chicken fillet (cubed)
1 onion (chopped)
1 tomato (chopped)
2 tbsp butter
1 tsp crushed garlic
3 jalapeños (sliced)
Salt to taste
1 tsp Crushed red chillies
1/2 tsp crushed black pepper
2 tbsp butter
2 cups frozen sweet corn
Salt to taste
Pepper
Method:
In a pot place all chicken ingredients and cook until chicken is done.
Fry sweet corn in butter. Season with salt and pepper.
Slit peppers in the middle. Do not cut right through. Clean out seeds.
Fill each pepper with Mexican chicken, top with corn and sprinkle with cheese.
Place peppers on oven tray and grill in preheated oven (180c) for 20 minutes or until cheese has melted and peppers have browned😊
