Malva pudding




Ingredients 

For milk tart...

500g vanilla custard

1/2 tsp cinnamon

20 white marshmallows


For the malva pudding...

1 cup sugar

2 eggs

8 tbsp milk

4 tsp butter melted

1 tsp white vinegar

1 cup self raising flour

1 tsp bicarbonate of soda

3 tsp apricot jam


For the syrup...

150g sugar

8 tbsp water hot

150ml cream

Ground cinnamon for dusting


Method...

Pour the custard into a bowl and add in the marshmallows and mix together.

Put it in the microwave for 3 mins and take it out every 30 sec and whisk without stopping.

Once the marshmallows have melted and the mixture has thickened,add the cinnamon and whisk to combine.

Allow the mixture to cool and stir so that it doesn’t firm up.


For the malva pudding...

Preheat the oven to 180 degree.

In a large bowl,beat the eggs and sugar until fluffy and double size.

Add the apricot jam,milk,butter and vinegar and stir until combined.

Add flour and bicarbonate of soda and mix.

Pour the mixture into a greased baking tray and bake for 30 mins.


For the syrup...

Heat the cream,sugar and water in a small saucepan and bring it to a boil. 

Ensure that the sugar has dissolved and the mixture is slightly thick.

After removing the pudding from the oven,poke holes in it and pour the syrup over the pudding.

Once the pudding has come to room temperature put it in the fridge and allow to cool for 20 mins.

After 20 mins,take it out and pour the custard on it.

Smooth the custard to get an even layer.

Dust cinnamon and put it back in the fridge so the custard can set.

Once cooled,cut into squares and enjoy😊
