Healthy bran muffin


2 eggs 

11/4 cup brown sugar 

11/2 cup oil

2 cups digestive bran

1 cup nutty wheat

11/2 cups flour (I used 2 cups flour) 

2 tsp bicarbonate of soda

2 cups milk

1/2tsp salt 

1/2 cup pitted dates chopped

3/4 cup almonds chopped

3/4  cup pecan nuts chopped

1/4 cup sunflower seeds

1/4 cup sesame seeds

Beat eggs and sugar and oil. Add dry ingredients. Lastly add milk. Spoon mixture into muffin pans. Sprinkle sunflower seeds on top. Bake at 180 degrees till skewer insert is clean .


*I added 1 carrot to the above batter. Also, I chopped my dates in a bowl and added a little boiling water and a pinch of bicarb to the bowl-- left it for 10 mins then added it to the batter
