Coconut gulabjamun

( 1 cup = 250ml)

1 1/4 cup + 2 tsp cake / all purpose flour 

1 tbs samolina

1 tsp baking powder 

1/4 tsp bicarbonate soda / baking soda

1/4 tsp elaichi/ cardamon powder

Large pinch nutmeg

1 large egg

3 tsp oil

1/2 cup condensed milk

Mix all the ingredients well, except the flour.

Now add the flour in slowly and mix.

You want a soft but not a sticky dough.

Thats the quantity of flour i used above. 

You might need less or more.

Divide into 30 for small or 25 for medium jamuns.

You can make them into any size you like. Remember it expands in the oil to triple the size. Keep that in mind.

Roll into an oblong shape.

Deep fry on low to medium heat till golden. Drain leave aside.

Make the syrup hot ( not boiling) . Switch the heat off. Add the jamuns and soak for 30min.

The Jamuns will soak alot of the syrup.

Remove and coat in desiccated coconut.

Ready

For the syrup:

1 1/2 cups sugar

3 cups water

1 tbs rose water

5 saffron strands

1/4 tsp elachi / cardamon powder

Boil the above till it just begins to feel sticky. It should still be thin though. Leave aside. Make it hot before adding the Jamuns.
