 Bounty cake 

 

Preheat the oven to 180°


Coconut filling:

4 egg whites (keep the yolks aside as you will need them later) 

1/2 cup icing sugar 

1&1/4 cup coconut 

1 tspn vanilla essence 

1/2 tspn baking powder 


Beat egg whites till stiff. Add in the icing sugar, vanilla essence and beat.. fold in the coconut and baking powder and keep aside. 


Cake batter: 

125g butter 

1/2 cup castor sugar 

4 egg yolks (ones we kept aside) 

1 tblsp vanilla essence (I added 2 tblsp) 

1 cup cake flour 

1&1/2 tspn baking powder

2 tblsp cocoa powder 

3/4 cup milk. 


Cream butter and sugar, add in the egg yolks and vanilla essence and beat for a bit. Fold in sifted flour, baking powder and cocoa. lastly add in milk and beat for few mins till well combined. 

Pour half of the cake batter in a greased pan, add the coconut mixture on top then add the other half cake batter on top. Make sure to spread well.. bake for 30 mins or so on 180° till the cake is done.  



Chocolate ganache

1 tin nestlé cream 

Melted dairymilk chocolate.. 

mix both well and pour over the cake.
