Rost chicken

 


Roast chicken 


2 whole skin chickens seared or 3 baby chickens 

1/2 cup oil & butter as required 

Salt as required 

1 tablespoon fresh pounded garlic 

1/2 tablespoon ginger/ garlic 

1 tablespoon heap Portuguese spice 

1 tablespoon heap tandoori spice (Shan) or any 

2 teaspoon black pepper 

2 teaspoon peri peri powder 

1 tablespoon heap Kashmiri chilli powder 

1 dessertspoon spoon mild chilli powder or as required 

1/4 cup vinegar or as required 

Method 

Clean rinse & pat dry chickens then sear in a frying pan without oil till slightly charred 

Marinate chicken above in all spices overnight or as required 

Bake in oven 180 degrees till done or oven temperature vary so bake accordingly to yre manual instructions 

Check with a digital thermometer till outer chicken skin is crispy & inside of chicken tender

Lastly grill on 250 degrees for a crispy skin   Approximately 5-10 mins (optional)
