Rose,Cardamon and Pistacio
Tres Leches Cake
1 cup cake flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon fine cardamon
5 eggs separated
1 cup castor sugar
1 teaspoon rose essence
1 tablespoon rose and cardamon syrup
1/2 cup milk
4 tablespoons soft butter
Red gel colouring
Sliced pistachios to decorate
Sift the flour baking powder, salt and cardamon powder into a dish.
Seperate the eggs
Beat the egg whites untill stiff and set aside.
Beat the eggs yolks with sugar untill pale and fluffy
Add in the rose essence
Add in the soft butter
Add a few drops of red gel colouring into the milk
Add in the milk into the butter egg mixture.
Beat well untill the butter is fully incorporated
Add in the flour mixture.
Beat well
Pour into pre greased silicone moulds or square cake pan
Bake in preheated 180degress oven for 20 minutes or untill the cake skewer comes out clean.
Cool the cake down poke holes with a cake skewer and pour the mil glaze over.Do not use all the milk glace reserve some for serving your dessert.
The 3 milk glaze
1 can evaporated milk
1 cup fresh cream
1 can condensed milk
1/2 cup full cream milk
2 tablespoon rose and cardamon syrup
1 teaspoon rose essence
A few drips red gel colouring
Add in the evaporated milk,condense milk and full cream milk and fresh cream and whisk well.Make sure there is no lumps in the milks.
Add in the rose and cardamon syrup
Add in the red gel colouring.
Fresh Cream
250ml fresh cream
1/2 cup icing sugar
Beat fresh cream untill stiff peaks form add in the icing sugar.
To assemble
Pour some milk sauce in a dessert bowl
Place the cake on top,pipe fresh cream and sprinkle sliced pistachios over decorate as you desire.
