Condensed milk rusk


 

CONDENSED MILK RUSKS


1 Tin sweetened Condensed Milk ( add extra if you

like sweet rusks ) 

2 Large Eggs

1 cup coconut yoghurt ( or plain ) 

1/2 cup Fresh Cream

1/4 cup melted butter or ghee

1 1/2 tsp salt

1-2 cups crushed Bran Flakes ( optional ) 

250 ml warm water

Approx 1 kg flour

3 tsp Instant yeast


1. Beat eggs with condensed milk, butter/ ghee, yoghurt and cream till smooth

2. Add salt and water and mix well. 

3. Add all dry ingredients ( flour being added gradually to get the right consistency i.e a firm but pliable dough ) 

4. Knead dough till smooth and elastic. 

5. Place in an oiled bowl and leave covered in a warm place to rise till double in size.

6. Punch down dough to expel air, knead again and shape into long baguettes .

7. Leave to rise again till double in size then bake in a preheated oven on 220 till golden brown and cooked through. Switch off oven and leave another 10-15 minutes 

8. When cool pack bread in a plastic bag and leave for a day or 2. 

9. Slice loaves ( approx 1/2 - 1 cm thick slices ). Place slices in a single layer on baking trays, slightly overlapping to allow air to circulate around slices and dry out in the oven on a low temperature ( 120-130 deg ) 

10. When cool pack in airtight containers to keep

risp.
