Mexican Rice with Grilled Chicken Fillets


I just marinated the chicken mixing both these spices with g/g paste and a little oil for a couple of hours. And then grilled in the pan before serving. 


For the rice, I have just used Mexican spice.

In a pan, take 2 tbsp of oil and saute 1 chopped onion. When translucent add 1.5 cup already soaked rice. Give it a stir and then add 2 tbsp of mexican spice, 1 tbsp tomato puree, and chopped bell peppers. Mix it throughly but carefully so the rice don't break, add chicken stock and let it cook till the rice are soft. You can adjust the salt accordingly.


And it's ready to be served with the chicken.
